MEXICAN SOUP / SOPA MEXICANA

This is a delicious recipe, takes its time but at the end is so worth it. It is ideal for sharing with friends and family. I hope you enjoy it ☺

Ingredients 2 people:

½ onion

2 cloves of garlic

5 large red tomatoes (or a large can of tomatoes)

2 cups water

1 breast chicken cut into cubes

chopped cilantro

nachos

Guacamole or diced avocado if you prefer

Shredded cheese

lemon

Fruit vinegar

sour cream

Salt and pepper.

Preparation:

To make the soup:

Peel 4 tomatoes, remove the seeds and then liquefy.

Fry in a pan 2 tablespoons of diced onion and crushed garlic. Add the tomato paste and water cups.

Saute diced chicken with garlic and a little salt and pepper 

To make the pico de gallo:

Chop the cilantro, tomato and onion (the latter two into cubes). Add the lemon juice, a little vinegar, salt and pepper.

You can mix all the ingredients into the soup or put each one in separate dishes for each person to serve what they want.

You can also use chili if you like spicy.

Esta es una receta deliciosa, toma un poco de tiempo pero la verdad vale mucho la pena. Es ideal para compartir con amigos y familia. Espero la disfruten ☺ 

Ingredientes 2 Personas:

½ cebolla

2 ajos

5 tomates rojos grandes (o una lata grande de tomates)

2 tazas de agua

1 pechuga de pollo cortada en cubos

cilantro picado

nachos

Guacamole o si prefieren aguacate en cubos

Queso rayado

Limón

Vinagre de frutas

sour cream o crema agria

Sal y pimienta.

Preparación: 

Para hacer la sopa:

Pelar 4 tomates, quitarle las semillas y luego licuarlos.

Sofreír en una olla 2 cucharadas de cebolla cortada en cubos y el ajo triturado. Agregar la pasta de tomate y las tazas de agua.

Sofreír el pollo cortado en cubos con el ajo y un poco de sal y pimienta

Para hacer el pico de gallo:

Picamos el cilantro, el tomate y la cebolla (estos dos últimos en cubos). Agregamos el zumo de un limón, un poco de vinagre, sal y pimienta.

Puedes servir todos los ingredientes dentro de la sopa o poner cada uno en platos separados para que cada persona sirva lo que quiere.

También puedes utilizar chile si te gusta el picante.
